Kicked-Up Black Bean Turkey Chili

Serves: 6-8 servings
Ingredients
  • 1 tablespoon olive oil
  • 1 medium onion
  • 3 cloves garlic
  • 2 bell peppers (red, yellow or orange would work well...green isn't as sweet)
  • 1 - 1½ pounds ground turkey
  • 1 (28 ounce) can crushed tomatoes
  • 2 cans black beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 cup chicken broth
  • 1 tablespoon chili powder
  • 2 teaspoons cumin
  • ½ teaspoon oregano
  • 1½ teaspoons salt
  • 1 tablespoon espresso powder (or 2 tablespoons strongly brewed coffee)
  • 1 cup corn
  • 2 small zucchini
  • Sliced avocado, shredded cheese, sour cream, cilantro, hot sauce, etc. for serving
Instructions
  1. Prepare your vegetables: finely chop the onion, bell peppers, and zucchini. Mince the garlic. Set vegetables aside until you're ready to use them.
  2. In a large Dutch oven or deep pot, heat the olive oil over medium heat. Add the onions and sauté until soft and translucent, about 5-7 minutes. Add the garlic and stir. Then add the chopped bell peppers and sauté until they begin to soften, about 3-4 minutes.
  3. Add in the ground turkey and cook until it is no longer pink.
  4. Add in the crushed tomatoes, black beans, diced tomatoes (juice and all), chicken broth, spices, salt and espresso powder. Stir to combine and let the chili simmer for 20 minutes.
  5. After 20 minutes, add in the corn and chopped zucchini. Simmer for another 35-40 minutes, until the zucchini is tender.
  6. Serve with your choice of toppings: sliced avocado, sour cream, shredded cheese, cilantro and hot sauce.
